Chemical contamination of food poses a threat to human health, from mild symptoms to severe neurological disorders, reproductive problems, and risk of diseases such as cancer. To address these health risks, monitoring food contaminants is crucial. Electrochemical multi-sensor platform with electromechanical interface will be developed as a proof-of-concept for the quantification of antibiotics, mycotoxins, or their markers in food without the use of expensive equipment and lengthy procedures. Working electrodes made of carbon materials, B-doped diamond, and metals will be modified with various nanomaterials for the detection of target contaminants below maximum residue limits. Electrochemical immunoassays with magnetic particles and labeled antibodies will be designed if necessary. The proposed configuration of multi-sensor platform will integrate up to 8 different sensors with specific modifications on one device with the possibility to scale up, enabling simultaneous and high-throughput analysis of several classes of food contaminants in many samples using multichannel analyzers.
