Project results evaluation

The sensitivity of chosen mould and yeast strains against minor metabolites (especially acetoin and mannitol) produced by lactic acid bacteria (LAB) was investigated. Furthermore, the effect of LAB minor metabolites on Caco-2 cells was proved.
