Grape juices from given sort of vine with health benefit

Project goals

The selected sorts of the vine will be planted and their grapes will be used for juice preparation containing as much as possible bioactive compounds (resveratrol, direct antioxidants, fenolic substances). The standard and biological produce will be used. The physical treatment of grapes will be used to generate in grapes the bioactive compounds having the health benefit. The non-thermal processing of the juices such as high pressure pasteurisation will be used. The aim of this part of research will beto compare the content of bioactive compounds in standard processed and new methods processed juices.

    The project solution shows high practical relevance and extensive implementation in food processing facilities. Four types of biological juices and a grape concentrated enriched with resveratrol and quercetin were prepared. The project implementation andthe fund drawing were as planned. The purpose of the project was accomplished.
