Main issues of this chapter are to review the increasing value of CWR for searching of new characters for changing environment and fulfilling demands of world market for diversity of foods. Both, CWR of selected fruit crops and wild species as potential candidates for new crops will be included.Many of them have unique properties in terms of taste, chemical composition, nutritional value, antioxidative activity and medicinal uses. There are also promising new fruits, suitable for direct use and for processing in food industry, especially those, known and used only locally (Eleagnus multiflora, Lonicera coerulea, Vaccinium praestans). However, in some cases, there are serious limitations that hinder their wider use and spread. First it is often a poor (local) knowledge of material, specific growing conditions and environmental limitations.
