At the present time, the breeding of modern wheat cultivars is predominately based on the yield abilities, the resistance and bread-making quality parameters. Unfortunately, monitoring of nutritionally important components is still not a subject of breeding interest. Therefore, our paper analyzed variability of selected non-starch polysaccharides in the 10 modern wheat cultivars depending on different localities and treatment intensity. Significant cultivar differences were found in the content of total arabinoxylans. Variability of dietary fiber and water soluble arabinoxylans was essentially influenced by weather conditions.
