There are described the new methods and quantification of deleterious substances in the food chain. In the United States there was developed the ethylen sensor element, which is able to detect the traces of harmful ethylene in low concentrations and it is useful especially in application in stores destined for crops, which are processed in food industry (fruits, vegetables and potatoes). This contribution describes other adverse factors occurring in production of potatoes, as are for example soil erosion, washing off and outflow of nitrates into the soil and waters and it mentions also food safety, products from potatoes, maximal levels of residues, the most often detected substances (propamocarb, acrylamides, chloropharm, asparagine) etc. There are mentioned the results of measurements other deleterious factors (for example dustiness, noise) in terms of health and hygiene of work during the harvest of potatoes in field conditions.
