The chapter is focused on the identification of proteinaceous binders and protein additives by the method of peptide mass mapping using mass spectrometry MALDI-TOF (Matrix Assisted Laser Desorption/Ionisation ? Time of Flight). The method is well described in the paper and its application on various types of historical materials is shown. The method is used for identification of proteins in the samples of colour layers of art works and historical mortars.
