Production of antimicrobial substances by strains of Lactobacillus genus
Original language description
Strains of Lactobacillus genus are used in the dairy industry as probiotics. Probiotic bacteria are often selected for use on the basis of their ability to adhere to the intestinal mucosa, acid and bile stability, and one of the proposed beneficial effects is the inhibition of the growth of pathogenic bacteria. The inhibition can be caused by production of antimicrobial substances such as acids or bacteriocins. All strains were tested for production of antimicrobial substances using the agar spot-test and the agar diffusion test. Strains of Lactobacillus (11 strains), Clostridium (5 strains), Staphylococcus (1 strain), Salmonella (2 strains), Enterococcus (2 strains), and E. coli (3 strains) acquired from the Institute of Dairy Science and Probiotics,University of Ljubljana, Domžale, Slovenia, were used as indicator strains.
