    Sulfur substances of hop oils - another tool for identification of hop cultivars

    Sulfur substances are important components of the hop aroma, even though they account for only approximately 1% of the total oil fraction of hop cones. Thirty sulfur-containing volatiles were detected by chromatographic analysis of hop oils by distillation. Thioesters S-methylthio-hexanoate, S-methyl-thio-isovalerate, S-methyl-thio-butyrate have been identified as the dominant components. Polyfunctional thiols were not detected because their amounts are very low in hops. It was found that the composition of sulfur compounds of hop oils, examined on a set of 14 Czech hop cultivars, can be used to distinguish cultivars. Statistical evaluation using multivariate statistical methods has shown that the spectrum of sulfur substances can be used to determine the cultivar authenticity for only a few cultivars (‘Boomerang’, ‘Kazbek’, ‘Gaia’, ‘Vital’). For other cultivars it is not sufficient to distinguish them reliably. The analysis of sulfur compounds of hop oils must therefore be considered as an auxiliary chemotaxonomic tool.
