Extraction and characterization of B-glucans from new Czech barley varieties
Original language description
Wholemeal barley flours from different hulless spring barley varieties were used to analyse and extract the water-soluble β-D-glucans. The barley varieties differed in β-glucans content and starch type (normal and waxy). The suggested extraction process of water-soluble β-glucans was optimized. Microstructure and molecular weight of β-glucan extracts were analysed and compared with regard to the barley source.
