The poster was presented on International Dairy Federation World Dairy Summit, 20.-24.09/2009, Berlin Germany. Occurrence of gas-producing clostridia in milk is one of the most important problems in semi-hard and hard cheese manufacturing because they can cause unfavourable odour and undesireable opened texture that are typical for late blown cheese. The main task of this work is to compare effect of muramidase, potassium nitrate, the mesophilic starter culture CCDM 1, nisin, the nisin-producing Lactococcus strain CCDM 731 and two Lactobacillus paracasei NSLAB (non-starter lactic acid bacteria) strains with anticlostridial activity on survival and growth of gas-producing Clostridium tyrobutyricum in model cheese-slurry system.
