Fruit juices are appreciated for their intense aroma and flavor. A few years ago a customers did not seek beer with fruit flavor. Flavored beers, which are collectively called "Beermix" belong between hits today. Nonalcoholic beer takes about 3% of customers, but it took them more than 10 years. On the other hand the flavored beer also claims 3%, but it just takes them 1 year. Typical flavors available on the market are grapefruit, orange, black currant, cherry and apple. Those drinks have become a refreshing and pleasant change for women and young people. Their quality could be improved by reducing their acidity. Electrodialysis with bipolar membrane (EDBM) is an interesting method for deacidification of fruit juice. In addition the sensorial characteristics of fruit juices were only slightly modified. Ion-exchange resins strongly modify the aroma and provide effluents during the regeneration step.
