Separation and concentration technologies are among the most important unit operations in food processing. The dairy industry has used membrane processing since its introduction in the food industry to clarify, concentrate and fractionate a variety of dairy products. The pressure-driven and electro membrane processes MF, UF, NF, RO and ED are the most common membrane processes in the dairy industry and based on their applicability range it is possible to separate virtually every major component of milk, thus enabling the manufacturing of products with unique properties and functionalities. Electrodialysis with bipolar membranes (EDBM) can replace electrolysis with water splitting at the electrodes but has a wider variety of applications. The first industrial application of bipolar-membrane electrodialysis was oriented toward the recovery of acids and bases from salt streams. This process can be very energy-efficient and has a multitude of interesting applications.
