Original language description
The chapter outlines the general philosophy of food chain security with respect to food subsistence in the military sector. Methods of risk management are applied to the army of the Czech Republic. The main case studies aimed at food chain security during deployment are presented together with the outcomes of major research into catering. A basic risk catalogue was compiled after risk identification and assessment. A map of risks in the catering process was also developed with the illustrative risks andactivities of top priority in Ministry of Defence catering services. A user manual is the result of a risk management process on the basis of which measures can be taken in order to minimize and eliminate the occurrence or undesirable impacts of risks and their transfer to another entity.
