Article in Czech Hops 2021 (published by the Ministry of Agriculture of the Czech Republic, Prague 2021, pp. 58-63. ISBN 978-80-7434-620-0). The article describes the genetic and chemotaxonomic characteristics of the Saaz Special hop variety and presents the results of three-year brewing tests with hot and cold hops. The results showed that the fine aromatic hop Saaz Special from the chemotaxonomic point of view meets the requirements of the PGI „České pivo“ for markers of bitter substances and essential oils. The sensory profile of beers hoped with this hops is comparable to the traditional Žatec semi-early redbine hops, and therefore the Saaz Special variety was recommended by the Research Institute of Brewing and Malting for Czech beer production and subsequently included in the register of recommended varieties kept by the Czech Agriculture and Food Inspection Authority with effect from 2020.
