Poster. 38th EBC Congress, Madrid, Spain, 29.5. - 2.6.2022. Beer belongs to beverages where nitroso compounds still may occur. Their occasional high concentration (> 20 µg(N-NO)/L) seems to be the result of various factors, such as microbial contamination which may increase nitrites or nitric oxides in beer. So far, these compounds are determined as Apparent Total Nitroso Compounds (ATNC) which is based on nitroso group cleavage by concentrated hydrogen bromide. Hence, no specific information except presence of nitroso group is provided. However, there is still a gap in knowledge about the ATNC positive compounds. In addition, a carcinogenic N-nitrosodimethylamine contributes to ATNC by about 1 % and no correlation between them were found. Recent studies revealed that C-nitroso compounds may significantly contribute to ATNC, and a model study of nitrite ion reactions in beer recently showed that also other products, such as nitro, oximes and even cyano may be formed. Their contribution to ATNC as well as their toxicology and natural occurrence in beer is in our current interest.
