Nutrient Prices and other Socio - Economic and Health Determinants of the Body Mass Index of Canadians
Original language description
We examine the effect of socio-economic and health factors on Body Mass Index (BMI), particularly effects of prices of obesogenic (fat and carbohydrates) and leptogenic (protein) nutrients. Previous studies include either a set of food group prices or acalorie price in the determinants of BMI. Using a single calorie price variable assumes that the effect of one unit of fat and one unit of carbohydrates on BMI is equivalent. Our results indicate that changes in the three nutrient prices in our model have statistically significant impacts on BMI and the direction of the impacts corresponds to hypotheses from nutritional theory. The elasticity of BMI to the price of fat is -0.347 and the elasticity of BMI to the price of carbohydrates is -0.225, indicating that a nutrient tax on fat would have a greater effect on BMI than a nutrient tax on carbohydrates, although both effects are small. The elasticity of BMI to the price of protein is 0.664, indicating that a thin subsidy on protein woul
