This study investigates consumer drivers and barriers to the consumption of neglected and underutilized species (NUS) in Europe. Using an online survey conducted in six countries (n = 4,802), it applies perspectives from innovation resistance and food choice theories. Results indicate a generally neutral attitude toward NUS consumption, with psychological and functional barriers negatively affecting intentions. In contrast, environmental and health concerns, together with taste-related motives, positively influence willingness to consume NUS. The findings highlight the importance of addressing both barriers and motivators to foster broader adoption of NUS in consumer diets.
