Original language description
Changes in storage proteins of several legume seeds during germination have been investigated. These studies indicate that the major storage proteins in legumes are hydrolysed during germination and that this hydrolysis is slow. The mechanism, which control legume storage protein degradation during germination remain to be elucidated (Sathe et al., 1983). The effect of germination on enzyme inhibitor activity remains controversial because different results have been reported, depending on the legume type and germination conditions (Vidal-Valverde et al., 1994).
