The aim of the study is the evaluation of influence of sex on carcass value. The following factors were monitored: carcass body weight, lean meat share, MLLT electric conductivity, MLLT pH, shear force values, colour (L*, a*, b*), water Binding capacity.Sex significantly influences percentage of meat in the carcass. Impact of sex on meat quality was proved: shear force of MLLT from barrows was about 11% lower than that of muscle from gilts. Impact of sex on the electrical conductivity and pH of MLLT 45min and 24 hours P.M. and the colour (L*, a*, b*) was not proved.
