Original language description
Saccharomyces cerevisiae ssp. uvarum No 95 yeast strain was used at the high-concentrated 16 and 20 °P wort and conventional 12 °P wort fermentation. Also performance of lager yeast Saccharomyces cerevisiae ssp. uvarum Saflager TM S-23 strain in dried form are shown. Achieved results showed that activity of yeast depended on wort gravity. Experiments proved that dried lager yeasts were active and can be used as pitching yeasts.
