Enzymes preserving their activity under low temperatures are important for improving quality, reduction of microbial contamination and lowering the energy costs in food processing industry [1-3]. One of the straightforward applications of -galactosidaseis in technologies for production of lactose-free milk and for galactooligosacharides production. -Galactosidase (3.2.1.23), from psychrotrophic strain Arthrobacter sp.C2-2 living under extreme conditions, where the outside temperature never exceed s 5 °C, was expressed in E. coli and routinely produced in our group [4]. The crystallization experiments gave a collection of several crystal forms and sizes. Table 1. Different crystallization conditions gave different crystal habitus of ß-galaktosidase C2-2-1 from cold adapted Arthrobacter sp.C2-2: " needles 0.05 mm x 0.2 mm 10% PEG 8000, 0.1 M HEPES pH 7.5, 0.2 M Ca acetate " platelets 0.75 mm x 0.01 mm; slab shaped crystals 0.3 mm x 0.1 mm 22% PEG 4000, 0.1 M MES pH 6.5, 0.15 M (NH4)
