Original language description
The paper shows an important and potential application of ultrasound in food processing and control. Selected applications in food industry including industrial devices are introduced as well. As it was shown, the ultrasonic techniques are rapid, non-destructive, easy to automate and relatively inexpensive, the number of applications is rapidly growing in the field of chemistry, food and pharmaceutical technologies. The range of application of both processes - Low and High Intensity Ultrasonic Technique- increases all the time. The metastable zone width was measured for pure sucrose solutions and for concentrated raw juice. Temperature was controlled by a computer system according to a course, which was calculated and simulated in advance. The accuracy is sufficient for a control of an industrial process. The ultrasonic method was also successfully used for the concentration measurement of pure and technical sugar solutions. As a main result, a new two-parametric equation - dependence

Práce se věnuje použití ultrazvuku pro potřeby řízení a sledování potravinářských procesů. Je to rychlá, nedestruktivní, lehce automatizovatelná a relativně levná metoda původně použitá při krystalizaci cukerných šťáv.
