Original language description
It was used commercial kits for detection of enzymatic activity of citratsynthase mitochondrial enzyme that isreleased from the cells after their destruction by frost. These methods have been previously applied to fish; our determination was carried outon samples of meat of large slaughter animals (pig and cattle ). It was found that these methods are to differentiate between fresh and frozen/thawed meat to use and provide convincing results. The absolute results vary with the type of meat and depending on the used enzyme, but always have frozen meat higher enzyme activity in the exudate than fresh meat. This value is further increased with each subsequent freeze.
