Original language description
This study is focused on the characterisation of polysaccharides isolated by the microwave extraction from Ecuador Criollo cacao nibs and their shells. Cacao nibs and shells were subsequently washed with organic solvents, such as Triton X-100, petroleum ether and ethanol, to remove lipids, polyphenols and small carbohydrates. The microwave extraction under optimal conditions was then carried out. All isolation steps were monitored by FTIR on Nicolet 6700. Monosaccharide composition was determined by anion chromatography on Dionex DX-600. It was found that the main monosaccharides in nibs were glucose, xylose, galactose, arabinose and mannose, whilst monosaccharides galactose, arabinose, xylose, glucose and mannose were most abundant in shells.
