Original language description
This contribution is the first step for encapsulation of enzyme laccase by spray drying and preparation of enzyme/substrate particles. As the first step for this use were in this contribution characterized several substrates (ABTS , guaiacol and 2,6 - dimethoxyphenol) suitable for enzymatic reaction with enzyme Laccase obtained from fungi Tramates hirsuta. It was determined laccase activity and kinetic parameters for this subtrates and it was also determined the influence of chitosan on laccase activityand kinetic parameters of substrates.
