    Alternative sources of omega-3 polyunsaturated fatty acids

    This chapter describes potential undeveloped microbial sources of omega-3 polyunsaturated fatty acids (ω-3 PUFAs), with a special focus on eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA), which are important components of mammalian (and human) food. These microorganisms of interest are often characterized by the production of PUFAs by type I polyketide synthase (PKS I). Unlike common organisms, from cyanobacteria to higher plants or from protozoa to mammals, in which ω-3 PUFAs are produced by classical biosynthetic pathways, sometimes called aerobic biosynthesis, bacteria and some other microorganisms produce ω-3 PUFAs using a different approach. PKS I uses an acyl carrier protein for hydrocarbon chain synthesis and continues the iterative cycles with the addition of C2 units and double bonds. PKS I has been detected in a number of deep-sea bacteria such as (e.g., Shewanella sp. and Photobacterium sp.) and in dinoflagellates (e.g., Schizochytrium and Thraustochytrium).
