    Flavonols and Flavones

    Flavone and flavonol glycosides are one of the largest classes of flavonoid with over 2000 known structures. Both groups share a 2-phenyl-chrome-4-one backbone, composed of a three-ring skeleton structure (C6-C3-C6) with two benzene rings (A- and B- ring) and an oxygen-containing ring with a C2-C3 double bond (C-ring). Flavonols are 3-hydroxyflavones (3-hydroxy-2-phenylchromen-4-one), and the most studied flavonols are quercetin, kaempferol, and myricetin. They all have a hydroxyl group at C-5, C-7, and C-4′ but they differ in the hydroxylation pattern of the ring B. Onions, kale, lettuce, tomatoes, apples, grapes, and berries are rich sources of flavonols. Apart from fruits and vegetables, tea and red wine are also common sources of flavonols.
