Rheological properties of honey

Result description

The determination of rheological properties is very important for designing of devices, which are designated for transportation or processing of a honey. The work deals of describing rheological properties of three kinds of honeys originating from CzechRepublic. In the work has been described the following rheological properties: the viscosity dependence on a temperature of a sample and the shear rate dependence on a shear stress. Based on measured values was applied Arrhenius mathematical model. The activation energy was determined with use of this model. Tests have been carried out in the temperature range 0 °C to 50 °C. Based on measured values was found that tested samples of honeys has Newtonian behaviour in the whole range.
