The present paper deals with the strain behaviour of the Edam cheese at static and dynamic loading. The static loading has been coducted using of the TIRATEST testing machine in the pressure mode. The relaxation tests have been also carried out. Both experiments have been used for the design of a rheological model of the cheese behaviour. It has been found that the rheological model of the three elements linear viscoelastic body
