Honey is a very valuable food of animal origin. It is not just a flavourful sweetener, but it is also considered a high-quality food with therapeutic effects. Honey inhibits the infection genesis, is useful in stimulation of wound and burn healing, deodorizes odoriferous wounds, absorbs oedematous humour, stimulates grow of the new tissue and is effective in treatment of gastric ulcers and gastritis.Antioxidant activity of honey is one of its important protective properties. This efficiency of potentialdietary significance is largely unexplored attribute of honey. Honey contains phenolic compounds (tocopherol, flavonoids and phenolic acids), ascorbic acid, -carotene, catalase and peroxidase, all of them function under certain circumstances as antioxidants. Content of these and other compounds in honey depends on the botanical source. Many properties of honey are highly variable because honey bees forage on a wide range of plant species in order to obtain nectar or honeydew. Antioxidan
