In some foodstuffs enterococci are used to extend shelf life and improve the hygienic safety of foodstuffs because they produce several antimicrobial substance such as bacteriocins. 252 enterococci strains isolates from different foodstuffs were studiedto characterize their bacteriocin producing aktivity agains S. aureus, MRSA, L. monocytogenes and L. innocua.
