    The basic physicochemical parameters were determinated of floral, honeydew and forest honey from Brno and surroundings. Samples (n = 42) were divided into groups, depending on where they were collected to samples from beekeepers, from retail stores and specialist stores (beekeping stores and health food stores). Using standard methods described in the Harmonized Methods of the International Commision for Honey were derminated electrical conductivity, hydroxymethylfurfural (HMF) content and diastase activity. HMF values for samples from retail stores ranged between 10.27 to 75.52 mg/kg, in samples obtained from beekeepers between 0.29 to 15.28 mg/kg and samples from specialized stores between 1.76 to 85.25 mg/kg. Diastase activity of the samples from retail stores ranging from 4.3 to 20.5 DN, samples from beekeepers between 10.28 to 20.4 DN and samples from specialized stores between 3.5 to 19.7 DN.
