The aim was evaluation the effect of modified atmosphere (70% N2/30% CO2) on the selected parameters [colour indicators, ammonia, thiobarbituric acid reactive substances (TBARS) and antioxidant capacity (inhibition percentage of 2,2-diphenyl-1-picrylhydrazyl DPPH)] in chilled meat (2 +- 2oC) of organic chickens [breast and thigh (muscle and skin separately) and wing].
