    Gas phase behaviour in environment of fermentation processes

    The residence time distribution of the gas phase has been measured in a stirred tank reactor with three impellers mounted on a common shaft. The gas Peclet number is studied over a wide range of operational (impeller speed, gas flow rate) and geometrical (impeller size, type) conditions. The effects of impeller geometry and fluid properties are clearly described, indicating a critical influence of bubble size distribution on gas macromixing and recirculation. Hydrofoil down-pumping impellers were found to produce the best gas mixing compared to radial or up-pumping axial impellers exhibiting the lowest gas Peclet number. Viscous and non-coalescent batches exhibit a bubble size distribution with a significant proportion of small bubbles contributing to more intense gas mixing and lower Peclet numbers compared to distilled water. Due to the wide range of operating conditions used, the quantities found can be used not only in industrial applications for optimisation or design of stirred tank reactors, but also for more advanced modelling and verification of CFD simulations.
