    In our lecture we deal with the origin of undercoolability (resp. Of supersaturation) of fluids (resp. vapors). As known, total undercooling at the boundary of newly-forming solid phase consists of three partial contributions:the so-called constitutionalundercooling (due to departure of the local composition from the equilibrium one),the undercooling caused by nonplanarity of interface and, finally, from kinetic part of the total undercooling. Whilst first two terms are connected with the equilibrium properties of the system, kinetic undercooling compresses information about nonequilibrium processes taking place within metastable original phase. Applying nucleation theory, we compute maximally reachable undercoolings of the concrete materials (metallic melts, halides, polymers). Furthermore, we determine conditions under which undercooling remains time-independent throughout solidification and also estimate the rate of decay of metastability of the parent phase manifesting itself by ]
