    Phytate content in selected sort of legume and cereal

    The aim of this study was to follow the content of phytate (phytic acid) in yellow shelled peas (Pisum sativum) and mechanically hulled seeds of buckwheat (Fagopyrum esculentum). Dried seeds were grounded to a fine powder. The moisture of samples was determined according to the Official Journal of the European Union (2009). The moisture was 11.19% in peas and 11.10% in buckwheat. The content of phytate (phytic acid) was determined according to the modified Holt´s method (1955) using the spectrophotometer. Standard curve was measured using the Na phytate standard solution (0.2mM). The phytate content in P. sativum was in the range from 0.49 to 0.86% in dry matter and from 0.43 to 0.77 g per 100 g of the sample. The content of phytate in F. esculentum varied from 1.03% to 1.77% in dry matter, from 0.92 to 1.57 g per 100 g of the sample and from 917.10 to 1573.00 mg per 100 g of the sample.
