The paper deals with mathematical description of the transport phenomena related to the transport of sodium chloride in the hides during preservation with saturated solution of sodium chloride and application of the acquired knowledge of transport phenomena in desalting of fleshings as a cheap raw material for the production of biodiesel and high quality gelatin. Brine curing and desalting operations represent not only an environmental burden, but deficient utilization of the theory of the related transport phenomena has also economical impact such as high consumption of the preservation agent, water and energy. The main result of the paper is mathematical description of sodium chloride transport in raw hides and fleshings with detailed experimental description of the determination of transport parameters and pilot scale desalting of fleshings as one of the most important steps in the production of gelatin and biofuels.
