Mathematical Model of the Transport of Reacting Components in Gelatin Production
Original language description
The paper deals with mathematical description of the chemical deliming process during production of gelatin. This process is the most important step from chemical engineering and environmental protection point of view in production of gelatin. The modeldescribes two ways of chemical deliming - one using acid salts and the other using acid solutions. For further utilization of the model in optimization of the said processes to minimize the operating costs and environmental burden it was necessary to determine the values of the effective diffusion coefficients of the reacting components. The experimental part contains determination of the effective diffusion coefficient of calcium sulfate during deliming with ammonium sulfate. The results give ground for further optimization and exact transfer of laboratory data into real industrial operations.
