The plants containing biologically active compounds esp. antioxidants have been used in natural medicine for ages. These compounds are also utilized in increasing amount in the food industry. The application of natural antioxidants for the protection of polymers is in the beginning but increasing trends can be found in this area of research. Beetroot (Beta vulgaris L.) as a commodity containing a high quantity of compounds which exhibit antioxidant effects, represents a relevant source of these compounds for purposes of polymer industry. Antioxidants in beetroot belong to the group of phenolics, betalains, carotenoids etc. Various analytical methods can be applied for the evaluation of antioxidants effects, most often spectrometric techniques are used but also electrochemical or chromatographic methods can be employed.
