Original language description
There has been a growing interest in the application of membrane separation technology to recover and reuse valuable compounds such as proteins, lactose etc. from dairy by-products. Among the various compounds obtained in this process, bacteriocins − antibacterial peptides − can be particularly useful as potential alternatives to conventional antimicrobials. In particular, bacteriocin nisin due to its acceptance for commercial food applications and strong antimicrobial activity, can be used for development of polymer-based food packaging [1-2]. The aim of this study was an isolation, characterization and further purification of a nisin concentrate produced by fermentation process. In next step, the nisin concentrate was immobilized in polymer matrix and evaluated for its application as a material for antimicrobial food packaging.
