Annotation in Czech
A beneficial use for the antioxidants and BACs found in grape marc left over from organic wine production and their application in the food, pharmacuetical and cosmetics industries is sought. In particular the use of BACs in place of SO2 in the winemaking process will be investigated.

The project deals with complex utilization of residual biomass of viticulture production as a material for isolation of biol. significant compounds ? especially of natural antioxidants, which are useable at food and non-food industries. Furthermore, it monitors a representation of biol. values related to the wine quality with the possibilities of regulation of synth. antiox., in particular SO2.
