    Projekt vychází z poznatků AMR AMARANTH, a.s. o složení a možnostech využití amarantové biomasy jako zdroj bílkovin a z dosavadních poznatků o potřebách hledání zdrojů bílkovin. Vysoký obsah bílkovin ve výchozí surovině biomasy amarantu a při její vysoképrodukční schopnosti může být do budoucna i významným zdrojem bílkovin. Vhodná kombinace amarantového bílkovinného koncentrátu s dalšími bílkovinami dává možnost řady uplatnění, např. jako funkční potraviny, tech. produkty, komponenty krmiv atp.
