This chapter discuss the GC and LC based platforms that are the most commonly and widely used techniques for analysis of phytonutrients from food. Plant-based foods are very complex matrices for any analytical investigation. They contain different classes of compounds, which differ in chemical structure and behavior, polarity, size, and concentration. Therefore, the choice of analytical technique strongly depends on the physical and chemical properties of the analytes.
