Impact of Sprouting on Presence of Avenanthramides in Oat
Original language description
Avenanthramides (AVNs) are constituents unique to oats and have many outstanding health benefits, including antioxidative, anti-inflammatory, antifungal and antibacterial activity. In this study, we observed highly elevated level of AVNs in germinated oat seeds after 48 h and 72 h of sprouting.Our results have shown the possibilities of using sprouted oat grains in the food industry for the production of nutritionally valuable products.
