Original language description
Some food and feed products include biogenic amines (BAs), which create a significant toxicological risk. They are produced under unhygienic conditions during storage and processing. Thus, a rise in their concentrations is connected to putrefaction. Due to BAs thermostability, they persist in heattreated food and feed. BAs may cause a range of toxicological effects, particularly those caused by histamine, which depends on the food source as well as the individual’s vulnerability and health state.
