    Food quality evaluation and quality management in the food industry

  • Original language description

    A modern concept of quality involves the entire organization with all its activities. Evaluation of food quality doesn’t include just the issue of food safety, but also other factors such as nutritional quality, satisfying the consumer's sensor requirements, freshness etc. To achieve the required quality, it is recommended to implement quality systems contained in ISO 9000, respectively apply systems of excellence such as Total Quality Management (TQM) and HACCP system (Hazard Analysis and Critical Control Points). It is the fulfilment of customer requirements and involvement of all components of an organization to achieve the desired quality. If the quality control of methods of probability theory and mathematical statistics are used, we are talking about the statistical quality control.
