Wheat wort density as a tool for prediction of ethanol yield
Original language description
The effects of protein content, starch content, grain hardness, wort density before fermentation, wort density after fermentation and differences in densities on final ethanol yield were studied wheat varieties grown on six locations in 2008. Results showed statistically significant relationships at p=0.01 between all observed parameters. Regression equations were computed for the prediction of ethanol yield from protein content and wort density before fermentation with r2=82.01 and r2=95.63, respectively. Wheat ethanol yield predictions from both protein content and wort density are quite accurate and simple, which makes them suitable for distilleries.
