Original language description
Animal fats and vegetable oils contain predominantly triacylglycerols (TAG), which are esters of fatty acids (FA) and glycerol. Although fatty acids in TAG usually have an even number of carbon atoms, exceptionally they could also have an odd number (e.g., TAG from certain bacteria). These bacteria biosynthesize both odd-numbered and branched FA, which can then become minor components of the milk of ruminants. The effect of consumed food can also be reflected in the contents of the FA in TAG of fish oil, since fish stands near the end of the food chain, that begins with phytoplankton.
