Set of 13 winter wheat varieties, cultivated during 2013-2014 and 2014-2015 years on the experimental station of Department of Plant Production in Prague - Uhříněves in organic and conventional farming system was evaluated in view of selected production and qualitative parameters. Varieties cultivated ecologically reached in average yield of 8.8 t.ha-1, i.e. 83 % of average yield of varieties collection from conventional system (10.6 t.ha-1). Totally, yield results of evaluated collection of varieties from organic farming system confirmed, that in good soil-climatic conditions can reach in organic farming good results even high quality varieties, which are considered to be high demanding. Only 3 from 13 evaluated varieties from organic farming system reached min. crude protein content in grain dry matter for breadmaking wheat (11.5 %). However, baking quality of grain protein complex evaluated by Zeleny test was even at varieties from organic farming very good and limit for breadmaking wheat (30 ml) fulfilled 8 from 13 evaluated varieties. The best results, in case of emphasis on baking quality, reached varieties Evina and Fabius from quality group E - elite; in case of emphasis on yield of grain reached the best results varieties Gordian and Tobak (quality group B).
